Guernsey bean jar
The traditional Guernsey bean jar recipe has been part of the island’s life for centuries

Ingredients

1 large onion chopped
1 bay leaf
2 carrots diced
200g butter beans (soaked in water overnight)
200g haricot beans (soaked in water overnight)
Salt and pepper
1 pigs trotter or shin of beef
2 pints of beef stock or water

Method

1. Add all ingredients together in an earthenware jar or casserole dish

2. Pour over the beef stock or water

3. Cover the jar/dish and place in the oven. Gas 2-3 or 150-170°C for 6-8 hours

4. Occasionally check your dish. Top up the water level as needed.

5. Remove the bones from the meat and the bay leaf. Check the seasoning.

6. Serve with delicious baked bread and Guernsey butter.
